The Cold-Pan Trick for Perfectly Crispy Chicken Thighs Every Time
A simple but effective cooking trick is changing how people prepare chicken thighs. The method starts with a cold pan and no extra oil, yet delivers skin so crispy it rivals fried chicken. Chefs and home cooks alike have embraced it for its ease and bold flavour.
The technique focuses on bone-in, skin-on chicken thighs, a popular choice for quick weeknight meals. Before cooking, the thighs are patted thoroughly dry to cut down on splatters and help the skin crisp up. The key step is placing them skin-side down in a cold, dry frying pan. As the pan heats, the fat under the skin renders out slowly, cooking the meat gently while turning the skin golden and crunchy.
Once the skin is deeply browned, the thighs are flipped and the whole skillet moves into a hot oven. This finishes the cooking evenly, keeping the meat juicy. The method skips batter entirely, making it gluten-free while still delivering the rich, savoury taste of fried chicken.
For extra flavour, a spice rub can be sprinkled on the meat side of the thighs before cooking—but never on the skin, as it would burn. After the chicken comes out of the oven, a quick brush of sauce or glaze just before serving adds moisture without softening the crispy skin.
Though versions of this approach exist in classic cooking, the modern 'cold skillet' method gained traction in the 2010s. Food writers like J. Kenji López-Alt and cooking YouTubers helped popularise it as a foolproof way to achieve restaurant-quality results at home.
The result is chicken with crackling skin and tender meat, all with minimal effort and no frying mess. Because the fat renders gradually, the flavour stays rich and concentrated. This method has become a go-to for cooks wanting crispy, flavourful chicken without deep-frying or complicated steps.
