A student from Ural State Agrarian University has developed an innovative yogurt filling with a unique flavour. Olesya’s project introduces a 'lemon-lavender' filling made from natural ingredients. It recently advanced to the final round of a competition at Saratov State Vavilov University. The idea for the unconventional yogurt filling first took shape during Olesya’s internship. Under the guidance of associate professor Olga Neverova, she refined the concept over six months. The filling combines lemon zest, lavender essential oil, and citrus pectin, with no artificial additives.
The project gained recognition for its bold flavour and strong scientific approach. It was one of 27 research entries in the 'Agricultural Product Processing Technology' category. Functional foods like this offer extra health benefits beyond standard nutrition. The new filling uses only natural ingredients and avoids artificial colours or flavours. Its development marks a step forward in functional food innovation. The project’s success highlights the potential of creative approaches in food technology.
