NYC schools and hospitals embrace plant-based meals for healthier futures

New York City is expanding its plant-based food initiatives across schools and hospitals. A growing number of institutions now offer vegetarian and vegan meals to encourage healthier eating. The push aligns with broader efforts to improve public health in the city. The Department of Education first tested an all-vegetarian meal programme in 2018. Fifteen Brooklyn public schools took part, serving meat-free breakfasts and lunches to students.

Hospitals have since joined the movement. NYC Health + Hospitals rolled out Meatless Mondays at all 11 of its acute care sites. Patients can now choose plant-based entrees for breakfast, lunch, and dinner every Monday, while standard meals remain available. Brooklyn Borough President Eric L. Adams has openly backed the initiative. His support aims to make the city healthier by reducing meat consumption. Two New York Presbyterian hospital cafeterias and Lenox Hill Hospital also adopted the Monday meat-free policy. At NYC Health + Hospitals/Bellevue, a 2018 pilot helped patients with chronic illnesses switch to a whole-food, plant-based diet. Dr. Michelle McMacken, who leads the hospital's Plant-Based Lifestyle Medicine Program, highlights the benefits of cutting out animal products. She argues that such diets can lower risks of heart disease, diabetes, and obesity. Dr. Mitchell Katz, CEO of NYC Health + Hospitals, sees the programme as a way to give patients more control over their health. One patient, Stephen Carroll, tried the three-bean chili at NYC Health + Hospitals/Coney Island and left with new recipe ideas for home. The system plans to add more vegan and vegetarian options throughout the week, not just on Mondays.

The Meatless Monday campaign continues to grow in New York's schools and hospitals. Patients and students now have more plant-based choices, with further menu expansions planned. The shift reflects a broader effort to promote long-term health through diet changes.
