Chef Sean Eckman's Bold Yuengling Beer Recipes Transform Classic Dishes

Chef Sean Eckman has shared three new recipes featuring Yuengling beer as a key ingredient. The dishes include Lager Buffalo Sauce, Beer Cheese, and Black & Tan Chili. Each recipe uses different varieties of the beer to enhance flavour in simple, hearty meals.

The Lager Buffalo Sauce starts with a mix of hot sauce, butter, Calabrian chili pepper, cider vinegar, garlic powder, and salt. These are combined in a saucepan, then Yuengling Traditional Lager is added. The mixture cooks until the butter melts, then gets pureed and kept warm for coating chicken.

For the Beer Cheese, butter is melted in a pot before flour is stirred in and cooked for 2-3 minutes. Yuengling Lord Chesterfield Ale, milk, Worcestershire sauce, and seasonings are then added. Once the cheese is whisked in and fully melted, the dip is served warm with pretzels, vegetables, or crackers.

The Black & Tan Chili begins by browning 2 lbs of ground beef in a large pot over medium heat. Yellow onion, red bell pepper, garlic, and spices are added next. After combining, the chili simmers for 20-30 minutes to blend the flavours. Alternatively, it can be transferred to a crock pot for slower cooking.

The Lager Brine involves dissolving salt and sugar in water, then cooling the mixture with ice water and Yuengling beer. Chicken soaks in this brine for at least 4 hours—though no longer than 24—before cooking.

These recipes highlight Yuengling beer's versatility in cooking, from sauces and dips to hearty chilis. The dishes are designed for easy preparation and bold flavours. No additional court dishes or unique applications by Chef Eckman have been publicly documented beyond these recipes.
